Niigata Koshihikari Rice is an extremely popular cultivar that has a moderately glutinous texture, characteristic sweetness and a balanced aroma. It is grown in various parts of Japan from Tohoku to Kyushu, but the Koshihikari grown in Niigata has an especially renowned flavor. The reason for this is a set of conditions in Niigata which makes for delicious Koshihikari. Niigata is one of the highest snowfall areas in Japan and the melting snow containing lots of minerals creates nutrient-rich soil. Also, the temperature difference between night and days is ideal for giving rice umami.
